These eggplants are cultivated in open field in April and are harvested in July and August. In the farm they are washed, sorted, cut into slices, salt and places on drying looms for 3-4 days. Then they are sorted, washed, seasoned with the Mediteranean spices and put in jars with extra virgin olive oil. To obtain 500 g of dried eggplant it is needed about 10 kg of fresh eggplants and long working 130 hours. Ingredients: sliced eggplants dried in the sun (60%), extra virgin olive oil (30%), capers, hot peppers, garlic, herbs, wine vinegar, salt, sugar, lemon juice.
