They are cultivated in open field in May, and manually collected in July, when the tomato is still immature. They are washed, selected, cut into slices and left in the sun to mature. Even today 'I contadini'' farm uses this technique typical of Southern tradition. And it is only after this step that the green tomatoes are seasoned with Mediterranean spices and put manually into jars in extra virgin olive oil.
