The Salento green tomatoes are cultivated on the farm in the open field in May and harvested manually in July when they are still unripe. After they are washed, sorted, cut and matured in salt. The tomatoes are ground together with the capers of Racale and Mediterranean spices. The paté is put into jars with extra virgin olive oil. Ingredients: green tomatoes (30%), aubergines, extra virgin olive oil (30%), onion, capers, wine vinegar, garlic, aromatic herbs, salt, sugar, lemon juice. GMO free product.
