The leccine olives are typical of Salento. The expert farmers collect them from the tree when they are half ripened, between October and November. In the farm they are debittered. After being sellected, washed and sorted by size, the olives are left into water with salt for about 6 months. It's a challenging method, it takes long, but it is a traditional system that brings excellent results. They olives are put into jars manually and seasoned with spices and chilli pepper before being covered with extra virgin olive oil. Ingredients: leccine oloves (65%), extra virgin olive oil (30%), chilli pepper, garlic, aromatic herbs, salt, lemon juce. GMO free product.
